We would suggest that old fascias are discarded in most cases but if your old fascias are free from rot you can actually “cap” the existing fascia with a 10mm capping board explicitly manufactured for the job. This will reduce the cost of materials and waste disposal and can be a perfectly suitable method providing the same finish and durability as fascia replacement at a lower cost when installed competently.
